VITICULTURE
Climate: A warm, temperate climate with a much heavier rainfall in winter than in summer. Average temperature 16.5ºC with 569mm of annual rainfall.
Soil: Limestone-clay
Pruning: Double Royat and Double Guyot
Age of vines: 20 and 10 years
VINIFICATION
Early morning harvesting by hand into 15 kg boxes. After destemming the grapes are chilled, and then pressed. The must is decanted, and ferments with controlled temperatures (16-18º) in stainless steel vats. After fermentation the wine is stabilized and filtered.
SERVING SUGGESTION
Should be consumed at temperatures of 12ºC.
GASTROMONY
To accompany shellfish, sushi, grilled fish, dishes with light sauces and salads.
